
Extraneous elements such as forks and knives are removed at the completion of the dinner course. The shared vegetable platter bridging the centre of the table is also removed and replaced with a shared desert: crème brûlée. The sugar shell atop the brulee is laser etched with the completion of the adorning pattern and this is echoed by the introduction of candy shell bowls into the diners’ place settings. These new service items register to the existing stack of dishes and serve to complete the stack and protect the diner from the detritus of previous courses.
